Cookies and Cream Cupcakes from Vegan Cupcakes Take Over the World
They don't look as good as the ones in the book, but they tasted pretty yummy. I love the texture thanks to Oreo (yes the ones here are vegan) pieces mixed into the chocolate batter. My only issue is that I can't seem to find American style shortening and replacing it with margarine just doesn't seem to cut it.
What are other Aussies using for shortening?
And which ones should I make next?

I have the same problem - I use margarine instead, which (as you say) isn't quite right for the job.

And I thought that whatever you used for the icing was pretty yummy. In-fact I wish you hadn't left the bowl of icing with me because I started eating it out of the bowl with a spoon....but managed to stop myself before I became ill from all that sugar. :)
I forgot about all that icing.T sometimes eats leftover icing on bread which I think is pretty gross.
I'm trying to work out how I sneak cupcakes into the bar for your birthday. But I don't think I can, so we will just have to name another weekend as your second birthday and I'll make them for that ;-)
try "copha". it's vegetable shortening, and in the fridge section of the supermarket, along with margarine etc.
