Fruit Juice salads
With the weather being the hottest ever in Melbourne we have been eating lots of salads. The latest two contain fruit juice. Mr T made them both, but I chose the recipes, that has to count for something, right?
The first recipe was taken from Veggie Meal Plans. The recipe is called three bean dinner salad and I loved the fact that it asked for flax seed oil, I'm always looking for new ways to include it in meals. We only changed it a tiny bit we didn't include sweet potatoes, celery, red onion, red pepper and coriander (cilantro) because we didn't have them in our box from the food co op. Instead he added leek. He doubled the recipe because we like dishes to last more than one meal and he added about three times the normal amount of dressing. We both liked it, it was healthy, refreshing and didn't taste like flax oil. The apple juice just added a hint of sweetness and I don't think you would guess there was apple juice in it. We will certainly make it again, and try it with the suggested veggies.
The second recipe I made up and I think it was pretty good. It consisted of shredded carrot, cooked soba noodles and pan fried tofu and this orange miso sauce:
1/3 cup miso paste
2 tablespoons of Orange Juice
1 tablespoon rice vinegar
2 teaspoons soy sauce
1 teaspoon sugar
mix everything together and add to noodles
It may need a little tweaking but I think that miso and orange go really well together.
And because we have been eating such healthy salads, it seems only fair that we treat ourselves with these little ice cream treasures from Rishons. They are small vegan ice creams covered with chocolate and what appears to be rice bubble type bits on the outside. They certainly get our thumbs up.
Speaking of Rishon Foods, I went back to get another ice cream cake and they have sold out. Why did I open my mouth on here? Has anyone seen them any where else?

Yum, vegan ice cream bars! And those salads look really yummy... I will have to try that orange miso dressing.
The recipes I combined were right next to each other in the pasta chapter... I think fettucini e (straw and hay, but in italian), and linguini with cannelini-sage sauce. The next page had fettucini alfredo, so that should help you find them since I'm being very vague! But instead of yellow squash, I used red and green capsicum. And instead of sage, rosemary.
those salads look great - I love fruit juice in salads and I often want to try soba noodle salads but they never have any vegies in them - so I love your salad with carrots!
Oh and I see you have had your wisdom teeth out - many many sympathies - I still remember the pain of having mine out when I was 18 - my dad tried to make me eat baby food and I thought I had lost my sense of taste but found that baby food is just tasteless! Glad you are able to eat real food again!
